Sepi Fiore Sardo D.O.P.
Fiore Sardo represents the most ancient sheep’s milk cheese in Sardinia, dating back to the Bronze Age. One of the few cheeses produced with raw milk, it has its name probably due to the wooden moulds carved with a flower (fiore means “flower” in Italian).
The cheese has a strong, intense taste thanks to long seasoning. Its flavour is appreciated by people with particularly strong tastes and by those who wisely prefer to match this cheese in the simple, traditional way with bread.
Suggested wine: Cannonau di Sardegna.
