Tasting Note:
Rich, rounded red wine from Puglia in southern Italy, soft,
highly flavoured and scented with forest fruits, cracked black
pepper and a dollop of blackberry jam.
Winemaking:
Fermentation with maceration at a controlled temperature of
26 ° -28 ° C. After malolactic fermentation, aging in oak
barrels for at least 10 months
Vineyard :
The Primitivo variety has been cultivated for centuries in the
Puglia region. It tends to have high vigour, mature relatively
quickly and produce high yields. Drought and high
temperatures can be a problem so using the alberello
system of training allow for better vine management. Vines
are planted in the province of Taranto at an altitude of 150-
200 metres above sea level and the harvest is done by
hand.
Food matching:
It matchs very well with red meat, game, heavy sauces, but it
is also nice with spicy food and with hard cheese.
