The origin of the Cannelloni is very ancient: among the first forms of pasta born from the mixture of flour and water and salt, there are the Gnocchi and the Cannelloni, i.e. strips of pasta, of different lengths that were rolled up on themselves, forming perfect cylinders in which to lay the filling.

The Cannelloni, thanks to their large size, are particularly suitable to be filled with tasty compounds, based on meat or vegetables and ricotta.

The most used recipes for Cannelloni are those baked with tasty fillings and covered with a light layer of tomato and bechamel.
