Ideal for making tiramisu 

Ingredients:

WHEAT flour, sugar, EGGS, 20%raising agent (ammonium hydrogen carbonate, sodium hydrogen carbonate), glucose syrup, flavourings.

May contain NUTS and MILK.

Ladyfingers recipe

Ingredients

  • Albumen 6
  • egg yolk 6
  • sugar 90g
  • flour 120g
  • White wine vinegar)

Preparation

Combine the egg yolks and 60 g of sugar in the bowl of the mixer, then activate the machine equipped with the whisk and whisk the ingredients until you obtain a light and frothy mixture. In another bowl, pour the egg whites and whip them again with the mixer fitted with a whisk hook. Gradually add the remaining sugar to the egg whites as they whip.

At this point also add the vinegar always with the machine running. When the egg whites are well whipped, turn off the machine.

Combine the two compounds: add a part of the yolks to the whites and mix from bottom to top to mix everything without disassembling the compound.

Add the sifted flour a little at a time and always mixing from bottom to top. Collect the dough in a sac à poche fitted with a smooth nozzle and make strips on a baking sheet lined with parchment paper. Sprinkle the ladyfingers with sugar and bake at 200°C until golden brown. Arrange the ladyfingers on a tray and serve.
